PÂTÉ OF PEAS WITH BASIL

Ingredients

  • 200g I FRESCHI DI CAMPO Extra Fine Peas
  • 1 onion
  • 1 clove garlic
  • 1 shallot
  • 1 sprig basil
  • 1 lemon
  • salt and pepper
  • extra virgin olive oil

How to prepare

Peel and dice the onion, shallot and garlic.

Gently fry in a saucepan with 2 tablespoons of oil for a few minutes, then add the peas and mix.

Season with salt and leave to cook for a quarter of an hour.

Remove from the heat, add the basil, 3 tablespoons of oil and then blend the mix.

Add the juice of half a lemon, salt, pepper and mix well.

Transfer to a bowl and leave to cool.

Serve as an appetizer on toasted bread.
