CREAM MINESTRONE WITH CROUTONS
- 500 g I FRESCHI DI CAMPO minestrone with 15 vegetables
- finely chopped parsley
- 100 ml single cream
- grated Parmesan
- 5 slices bread
- extra virgin olive oil
- salt and pepper
How to prepare
Cook the I FRESCHI DI CAMPO minestrone with 15 vegetables in boiling salt water.
Once cooked, add a little oil and the cream and blend with a hand blender until it forms a thick, even cream.
Dice the sliced bread and gently fry in a pan with a little oil, until crisp and golden.
Serve the soup, sprinkled with Parmesan and finely chopped parsley.
Accompany with croutons to taste.
