• 600 g I FRESCHI DI CAMPO taccole
  • grated Parmesan
  • breadcrumbs
  • 5 black olives (stoned)
  • 5 anchovy fillets in oil
  • 1 clove garlic
  • extra virgin olive oil
  • salt and pepper

How to prepare

Fry the onion and garlic in a large pan until golden, add the taccole, season with salt and cook for about 6 minutes.

Pour a little oil into a medium oven dish and add the snow peas, lengthways, so that they form a compact layer.

Sprinkle with plenty of Parmesan and drizzle with a little oil.

Continue with a second layer of snow peas, this time crossways, more Parmesan and a little oil.

Repeat the layers until the snow peas are finished. Sprinkle the top with Parmesan and grated cheese, then decorate with the anchovies and olives.

Drizzle with a little oil, add salt and pepper and bake in a preheated oven at 180° for about 10 minutes, until golden brown.
