• 6 eggs
  • 250 g I FRESCHI DI CAMPO frozen spinach
  • 50 g butter
  • 1 clove garlic
  • 5 tablespoons grated Parmesan
  • salt and pepper

How to prepare

Boil the spinach in very little boiling salt water, then drain, squeeze and chop it.

Gently fry the garlic in 20 g butter, add the spinach and flavour for a few minutes.

Beat the eggs in a bowl with a pinch of salt, add spinach and Parmesan, season with salt and pepper and mix it in with a fork.

Melt the remaining butter in a non-stick pan, then add the mix, distributing it well.

Cook the mix over a medium heat and turn it over, with the aid of a lid, to cook on the other side.
