• 300 g I FRESCHI DI CAMPO Borlotti beans
  • 1 potato
  • 1 carrot
  • 2 cherry tomatoes
  • 1 onion
  • 1 clove garlic
  • celery
  • chopped parsley
  • 1 chilli pepper
  • salt and pepper, olive oil

How to prepare

Gently fry the finely chopped onion, garlic and tomato in a pan with a little oil.

Add the beans, peeled potato, carrot and celery, finely chopped, and the chilli pepper.

Cover with water and leave to cook.

Blend the mix to form a cream (add more hot water, if necessary, to reach the required consistency), season with salt and pepper, and serve drizzled with a little oil and sprinkled with finely chopped fresh parsley.
